Tender Coconut - Mango Smoothie


Today, I am sharing a refreshing and healthy smoothie,Tender Coconut - Mango Smoothie..Do check,some of the mango items I posted earlier,here and here..Its a tasty drink and can be served for iftar...Lets go to the recipe :)



    Ingredients

  • Ripe Mangoes, chopped - 2 no.s
  • Tender Coconut pulp ( elaneer kamb) - 1 cup
  • Tender Coconut water ( elaneer) - 1 1/2 to 2 cups
  • Sugar - 4 to 5 tbsp ( adjust accordingly)
  • Broken Cashews - for decorating ( optional)


    Method

  • In a blender, add all the ingredients except cashews and blend thoroughly..
  • Pour this juice in a jug and refrigerate...
  • Pour these in a glass and decorate broken cashews on top..
  • Serve chilled..

Virgin Pina Colada


Pina Colada' is a Spanish word which comes from the word " Pina'' means Pineapple and "Colada'' means strained..Pina Colada is a alcohol based drink made from strained pineapple, rum, coconut cream,which is blended with ice and decorated with pineapple wedges or cherry..It is said that this drink is first introduced in Puerto Rico, an island near Spain...Source Wikipedia
You might be thinking, am I posting alcoholic drink??..Of course not!!!...I am posting a non-alcoholic version of pina colada named Virgin Pina Colada..Instead of pineapple, you can add any fruits of your choice...Its a tasty and refreshing drink..You can serve this for iftar too..Do make this drink and impress your family..Let us go to the recipe..



     Ingredients
  • Pineapple,sliced - 8 pieces
  • Sugar - 5 to 6 tbsp ( can increase according to your sweetness)
  • Coconut Cream - 1 tin ( can substitute it with 1 cup tender coconut pulp and tender coconut water or thick coconut milk)
  • Ice cubes - accordingly
  • Pineapple wedges/ cherry - for decorating ( optional)

     Method
  • In a blender or mix, blend all the ingredients mentioned along with ice cubes...
  • Strain and pour it in a glass..
  • Decorate it with pineapple slice or cherry on top...
  • Serve chilled

Mango Lassi - Mango Yogurt Smootie


Lassi is a popular yogurt-based drink in India, Pakistan, Bangladesh etc..It is most popular in street stalls and in restaurants..Its a perfect drink to beat summer heat..There are two types of Lassi: Savoury and Sweet..Savoury lassi consists of yogurt blended with salt, chillies and other spices, while Sweet lassi is blended with yogurt,sugar and sometimes fruits too..As it is a mango season in India and Pakistan, today I am sharing  a mango based lassi - Mango Yogurt smootie..I shared another mango based dessert earlier, i.e Mango Cheesecake...Do select a fresh ripe and sweet mango for making this lassi..This tastes delicious when served chilled..Off to the recipe..



     Ingredients
  • Alphonsa Mango or any ripe mango, sliced  -  2 no.s 
  • Sugar - 3 to 4 tbsp ( depends upon your sweetness)
  • Yogurt - 1/2 cup
  • Fresh cream / Vanilla or Mango Ice cream - 1/3 cup
  • Full fat / Low fat Milk - 1 to 2 cups ( can adjust if you need more quantity)
  • Green Cardamon - 2 no.s
      Method
  • Add all the ingredients in the blender except milk and blend thoroughly for few minutes..
  • Then add milk and blend again..
  • Pour this in tall glasses and serve chilled..

     Notes
  • You can make plain lassi without adding fruits too..
  • You can add any fruits of your choice,but make sure to select fresh and ripe fruits..

Watermelon Mocktail


Did anyone wonder, like me, what is the difference between Cocktail and Mocktail?..Wiki says that, Cocktail is the mixed fruit juice, which is combined with spirit or alcohol whereas Mocktail is the mixed fruit juice which does not contain alcohol...Term 'Mock' represents 'imitation', so mocktail is the imitation of cocktail...You can make your own mocktail, whatever fruits is available in your refrigerator or pantry...Its simple, blend all the mixed fruits and make juice,that's it...I am sharing a post of watermelon mocktail which is combined with other fruits and made whatever is there in my pantry..The main highlight of this juice is watermelon..As you know, watermelon contains more water , so no need to add additional water..Its a health drink too..You can ignore sugar, as most of the fruits have natural sugar..If you are giving to kids, definitely add sugar, otherwise they won't drink it..You can add additional fruits of your desire..Its tasty and refreshing drink in summer...As Ramadan is approaching, make this mocktail for iftar ( breaking the fast)..Add cold ( refrigerated ) fruits while making this mocktail or refrigerate after making it..Lets go to the recipe.



     Ingredients
  • Watermelon, cubed - 1 cup ( add more, if needed)
  • Orange ( musambi), cubed - half of one orange
  • Grapes ( seedless), chopped - 1/4 cup
  • Ripe Mango, cubed - 1 small  
  • Red apple, cubed - half of one large apple
  • Sugar - 3 to 4 tbsp ( optional)

     Method
  • Blend all the ingredients mentioned without adding water thoroughly and pour it in a jug or container..
  • No need to strain juice..Never mind, if you blend watermelon along with seeds..
  • If you need more juice..Adjust the quantity of watermelon..
  • Refrigerate and pour it in a large glass..
  • Serve chilled

     Notes
  • Since this juice contains orange, so it is better to drink immediately or few minutes..Don't keep it for so long, as juice may taste bitter.
  • You can add any fruits of your desire.
  • You can strain the juice if you prefer..

Mint-Lemon juice

Today I am sharing a easy and healthy juice, Mint & Lemon juice..Its very easy to make and the ingredients mentioned are easily available in your pantry..Its truly a healthy refreshment drink in summer..As it contains mint, hence this juice is green in colour..Its looks attractive and tasty too..You can make large quantity and refrigerate it...It tastes yummy when cold, you can pour some ice on the juice or keep it in freezer for 5 to 7 mins for faster cooling..okay,lets go to the recipe.


Serves 2



Ingredients:
  • Mint leaves ( pudina ) - 1/2 bunch
  • Lemon juice - half of one big lemon or 1 small lemon
  • Sugar - 3 to 4 tbsp ( as per your taste )
  • Ginger,chopped - 1/2 tsp
  • Tender coconut water/ water - 1 to 2 glass ( depends )

Method:

  • Soak mint leaves in water for few mins, wash and drain it.
  • Put mint leaves in a blender,add chopped ginger and sugar.
  • Squeeze lemon juice ( remove seeds as it may taste bitter) and add 1 cup of water at time and blend thoroughly.
  • Then add remaining water and add sugar when required.
  • Blend again and strain the juice using a net strainer and pour in a bowl.
  • Refrigerate or add ice and serve in a tall glass.
